Ok, very good – I have collected 6L of 80% and will be proofing today, I started with 14L of Svedka vodka, decided to collect 45%, drank some and the angels got a share – leaving me with 6L which I will proof. A few notes from my first distillation, I would (and did) do a quick first cut, took about 100ml head cut then went into my hearts. Cassia bark was definitely prominent and I macerated half the juniper amount (around 85gs) then vapor distilled the rest of my botanical blend, I ended up with a juniper forward gin with definite spice notes…in order to balance it a bit I will proof with a spring water and some rose water I made earlier – then see. (open to suggestions on what is a balancing herb to cinnamon/cassia…) Looking forward to my next batch, want to add some basil i have growing that i forgot to add – all in all very very happy with everything. Looking forward to making my own mash and neutral spirit too. Many thanks for the help!

Can you add water to the neutral spirit…like if you wanted to have the final distillate be a lower ABV? Newie here so sorry if these are dumb questions, ill circle back after i try my first gin run…hopefully this weekend
