A few notes from my first distillation, I would (and did) do a quick first cut, took about 100ml head cut then went into my hearts. Cassia bark was definitely prominent and I macerated half the juniper amount (around 85gs) then vapor distilled the rest of my botanical blend, I ended up with a juniper forward gin with definite spice notes…in order to balance it a bit I will proof with a spring water and some rose water I made earlier – then see. (open to suggestions on what is a balancing herb to cinnamon/cassia…) Looking forward to my next batch, want to add some basil i have growing that i forgot to add – all in all very very happy with everything. Looking forward to making my own mash and neutral spirit too. Many thanks for the help!
