started using the Alquitar 5ltr today

the did the rye flush
cleaned it
water & steam flush
now I’m distilling 1500ml merlot and it takes forever.
only when the thermometer reads 82-88⁰C, I get a steady drip.
the first head of 45ml were as you described “off putting”
the first heart of 50ml big difference.
2nd heart milder
where the thermometer is placed is a different temp then the wine in the lower chamber where the alc is evaporated. Do I keep controlling the temp around a steady drip or do I stick to the alcohol temp chart in which case it is going to take till next week.
