Distilling Hydrosol

Foundation course

This course is intended for anyone who wants to distil their own hydrosols at home or in their business. It is designed for both beginners and those already familiar with other distillation techniques.

This course features a demonstration of two different distillation techniques for producing hydrosol—rosemary (modules 1-5), and quince (modules 6-9). We’ll demonstrate how to treat different types of plant materials, and how to extract the best hydrosol from each.

Course modules

Just a device and internet connection, as our courses are totally online. You don’t need a still in order to learn with us, but chances are after taking these courses, you’ll want one!

Each course comes with printable course materials, which will have a list of equipment and supplies used in the distillation, so you can outfit yourself beforehand should you want to distil along with us. As a guide, our basic set-up will include:

  • A still
  • Heat source (such as an electric hotplate or gas burner)
  • Submersible in-line pump and water reservoir (bucket, container or sink)
  • Accessories and tools (plastic tubing, scissors, electrical tape, beakers or jars)

You can choose your favourite aromatic plant, or have a read through our Encyclopedia Botanica to decide which plants you may like to begin your hydrosol journey with here.

Course Overview

Welcome to our foundation course for distilling hydrosol. After this course, you will be able to turn your favourite plants into aromatic hydrosols in your own kitchen or studio. You’ll learn everything you need to know to distil hydrosol from start-to-finish. From set up, to bottling, labelling and usage. We will walk you through two different hydro-distillations—rosemary (Rosmarinus officinalis) and quince (Cydonia oblonga). We’ll demonstrate how to treat these different types of plant materials, and how to extract the best hydrosol from each. We’ll show you how easy it is to start producing aromatics with a small still and the botanicals from your own garden or small-holding. And when you’re ready, you can easily up-scale for larger production.

Meet your Instructor

Jill Mulvaney

Jill Mulvaney is one of New Zealand’s leading distillation experts. She consults and teaches on all aspects of plant extraction for natural aroma and flavour. She teaches hydrosol workshops throughout NZ and internationally, enjoying teaching partnerships with internationally renowned phytochemists and aromatic distillers in Europe and America. Jill’s practice is informed by decades of experience with plants, and a deep respect for the natural world.
